Ingredients

  • 4 large bell peppers (any color)
  • 2 cups cooked chicken, shredded or diced
  • 2 cups fresh spinach, chopped
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded mozzarella cheese, plus extra for topping
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup marinara sauce (optional for serving)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.
