Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour for dredging
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 8 ounces cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 3/4 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Prep the Chicken: Season the chicken breasts with salt and pepper, then dredge in flour, shaking off any excess.
  2. Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil and butter until hot. Add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  3. Cook the Mushrooms: In the same skillet, add the sliced mushrooms and sauté until they are browned and softened. Stir in the minced garlic and cook for an additional minute.
  4. Make the Sauce: Pour in the Marsala wine and scrape up any browned bits from the bottom of the skillet. Allow the wine to simmer for about 2 minutes, then add the chicken broth and continue to simmer until the sauce has reduced slightly.
  5. Combine: Return the chicken to the skillet and spoon the sauce over it. Allow everything to cook together for another 2-3 minutes.
  6. Serve: Garnish with fresh parsley and serve the Chicken Marsala hot with your choice of side dishes.
